Crispy on the outside and tender on the inside
Flour, eggs, milk, yeast… these are the main ingredients needed to prepare delicious waffles – crispy on the outside and tender on the inside – although sometimes we also associate them with a good amount of sugar and some kind of ‘add-ins’ such as cocoa cream, cream, dulce de leche, syrup, ice cream…
More than a dessert
Although this typical Belgian dessert is made from natural ingredients, it is often the enemy of diets and healthy living because the 290 calories in 100 grams of waffle are often considerably increased by the accompaniments we choose, which are always high in calories and unhealthy.
Eating without remorse
However, you can eat waffles without remorse and enjoy this delicious food without fearing that your trousers will stop buttoning… Here are three healthy recipes that will make you put a waffle maker on your wish list if you don’t have one at home!
1. Savoury broccoli waffles
Ingredients
– 150 grams of raw broccoli
– 2 eggs
– 100 grams of almond flour
– Half a tablespoon of baking powder
– 100 ml milk
– Salt and spices to taste
Preparation:
Wash and dry the broccoli.
In the raw state, puree the broccoli in your food processor until it resembles cous cous.
Mix the shredded broccoli, almond flour, eggs, salt, baking powder, milk and your choice of spices in a bowl with a whisk.
When the mixture has a homogeneous consistency, heat the waffle iron (remember to grease it beforehand with EVOO).
Add half of your batter to the first batch of waffles. Remove them when they are cooked and golden brown.
Repeat the same operation with the rest of the batter.
2. Courgette waffles
Ingredients
– 40 g courgette, grated and uncooked
– 1 egg
– 4 tablespoons of wholemeal oat flour
– EVOO
– Spices to taste
– Salt and pepper
Preparation:
Grate the courgette, place it with a little salt in a colander for about 15 minutes so that it loses all the water.
To make the waffle batter, add the egg, wholemeal oat flour, well-drained courgette, a pinch of salt and pepper and spices to taste in a blender. Blend the mixture until smooth.
Heat your waffle iron (previously greased with EVOO). When ready, add the previous mixture and leave for 5 minutes, or until you see that they are well done and golden brown.
Carefully remove them and leave them to cool for a few minutes.
Serve them on a plate with whatever you like: avocado, cheeses, seeds, cherry tomatoes or salmon. Or you can even make them sweet and add strawberries, blueberries or natural yoghurt.
3. Baked pumpkin waffles
Ingredients
– 2 eggs
– 250 ml vegetable oat drink
– 150 g oat flour
– 150 g roasted pumpkin
– 20 ml EVOO
– 1/2 teaspoon baking powder
– 1 teaspoon vanilla essence
– Toppings to taste
Preparation
Add all ingredients to a blender and blend until smooth.
When the batter is ready, let it rest for a few minutes until it has a consistency.
Preheat the waffle iron and grease it with EVOO.
Add the waffle batter in portions (remember not to add too much to avoid overflowing).
Let the waffles cook for about 5 minutes or until you see that the batter is golden brown.
Remove the waffles when they are done, while they cool add more batter to the waffle iron until you are done.
Serve the waffles on a plate and accompany them with natural fruit, hazelnuts or even dark chocolate 70% minimum.
